Panettone from Esselunga is the one with the best quality, according to Altroconsumo
O best italian panettone in 2020 is the Esselunga retail store chain's own brand, according to Altroconsumo.
Its price is less than 4 euros (around R$23) and its quality is at the top.
As it does every year, the Italian consumer protection association has drawn up a ranking of the best industrial panettones in Italy.
The ranking of the best Italian panettone takes into account the use of certain ingredients in established quantities:
- sugar
- butter for at least 16%
- wheat flour
- chicken eggs of category “A” (or not less than 4% yolk)
- raisins and candied citrus peel in doses of not less than 20% and possibly in equal proportions
- shawl
- natural yeast obtained from sour dough
These are the ingredients that the consumer should pay attention to when reading the label, according to Altroconsumo.
Full of rules
The perfect fat is butter, and the generous presence of egg yolk, candied fruit and raisins is positive.
The yeast must be natural, due to its peculiar ability to flavor the dough.
But there are also other aspects to consider: the shape of the mushroom, with a domed top, not past the roast stage and homogeneous color.
The packaging must be made of rigid paper and, when cut, the dough must be soft, embellished by the alveoli (the fermentation holes).
