Another innovation presented in the municipality is a handcrafted hamburger made with cooked radicchio, bacon, and fried agnolotti. The proposal aims to show that the local culture remains alive and open to modernization.
“The idea is to show that our culture is alive. Agnolini, which everyone knows in soup, can also become a side dish for hamburgers here,” highlights the Secretary of Tourism, Henrique Sottoriva.
For those with more conservative palates, the menu features dishes prepared using traditional techniques. Options include carbonara pasta made with eggs, cheese, and bacon, as well as Genoa's typical pesto with toasted walnuts.
The preservation of family recipes is evident in dishes such as agnolini soup with pien and spoon gnocchi with Italian salami. The event menu also includes ciabatta sandwiches and classic desserts such as cannoli, tiramisu, and sago with cream.
