The Italian-Brazilian restaurant Evvai, located in Pinheiros, São Paulo, has achieved three Michelin stars. The establishment is one of the first two in Brazil and Latin America to obtain the publication's maximum rating, alongside the restaurant Tuju.
Founded in 2017, Evvai is led by chef Luiz Filipe Souza. He develops high-end, original cuisine based on the concept of "modern, creative, and with Italian roots."
The house participates regularly in Italian Regional Cuisine Week in São PauloThe annual event promotes cultural exchange by bringing chefs from all 20 regions of Italy to the city of São Paulo.

“Chef Luiz Filipe Souza conveys, like few others, his passion for gastronomy, precisely fusing Brazilian and Italian influences,” highlights the official text of the Michelin Guide. The organization praised the chef's skill in working with temperatures and textures.
However, the Italian pride translated into Chef Souza's creations can be experienced by few. The restaurant's main experience is the Oriundi tasting menu, composed of 13 courses and... priced at R$ 1.150The menu includes dishes that blend traditions, such as white moqueca with squid and pupunha (peach palm fruit) or scallop bomba (a type of seafood stew).

The menu also features ingredients such as duck tortellini with tucupi sauce and wild boar with orange. Typical Brazilian elements, such as cupuaçu and cassava, share space with classic Italian ingredients, such as pine nuts.
Another distinguishing feature highlighted by the guide is the artistic aspect of the service. Each course on the menu is accompanied by original illustrations created by the chef himself, explaining the history and preparation of each dish.
