Bolognese sauce is a hit all over the world, and let's face it, nothing goes as well with a beautiful dish of pasta as a tomato sauce with lots of ground meat, right?
But did you know that the sauce they make in Brazil is not a faithful reproduction of the original recipe, created in Bologna, in Italy? In fact, spaghetti bolognese is a dish that does not exist in Italy.
Follow the original recipe below, the “ragu' alla bolognese”, that comes from Italy.
Ingredients:
- Coarse ground beef: 500 g
- Pork (with a little fat): 250 g
- Tomato sauce: 250g
- Celery: 50g
- Onion: 50g
- Carrot: 50g
- White wine: 250ml
- Olive oil (extra virgin): 1 spoon
- Water: 3 liters
- Whole milk: 40g
- Salt and black pepper to taste

The controversy over Bolognese sauce
Bologna's iconic dish, from Emilia-Romagna region, in northern Italy, is the tagliatelle with bolognese ragù. Without a doubt, it is one of the most popular Italian recipes in the world.
But… spaghetti bolognese doesn’t exist, despite it being on menus all over the world.
However, in Bologna (or Bologna, in Italian), the dish is made with noodles, pasta cut into strips and typical of the region.
Emilians say that the term “Bolognese” is the most usurped term in Italian cuisine. There's even a proposal to teach the world's cooks what the real sauce that everyone swears they know how to make is like.
