Focaccia is a light and soft pasta, traditionally baked in a rectangular shape, typical of Italian cuisine.

10g of salt

7g fresh yeast (or 2g dry yeast)

340ml of warm water (or 340 g)

3 tablespoons of extra virgin olive oil (or 25 g).

Fleur de sel (optional) or coarse salt (to sprinkle on top)

How to:

In a large bowl, mix the flour, salt and yeast.

Add the warm water and olive oil and mix until a homogeneous dough forms. Knead the dough for about 10 minutes, until it is soft and elastic.

Let the dough rest in a warm place, covered with a clean cloth, for about 1 hour or until it doubles in size.

Open the dough with your hands and place it on a baking tray greased with olive oil. Let it rest for another 20 minutes.

Using your fingers, make holes in the surface of the dough and drizzle with more olive oil.

Sprinkle with fleur de sel (optional).

Bake in a preheated oven at 220°C for around 20-25 minutes or until golden. Serve hot.

Herb and Cheese Focaccia

Ingredients:

  • In addition to the basic dough ingredients (flour, salt, yeast, water and olive oil), add chopped fresh herbs such as rosemary, thyme and oregano.
  • Grated cheese, such as parmesan, mozzarella or gorgonzola, for topping.

Instructions:

  • Follow the steps in the basic recipe for the dough.
  • Before letting the dough rest, incorporate the chopped fresh herbs into the dough during the kneading process.
  • After rolling out the dough onto the greased baking sheet, generously sprinkle the grated cheese on top.

Ingredients:
