The research, presented during the second edition of Pizza Maker, organized by Eataly, investigates new trends in the world of pizza and reveals the habits and preferences of Italians in what, along with pasta, is the most famous dish in the world.

Quality first

“In its bright colors and perfume it seems to sum up the joy of living in our country”, says the commentator on Fellini’s “La Dolce Vita” radio, in front of Sylvia biting into a pizza.

The Italians' relationship with pizza is a lifelong friendship. And pizza, according to Doxa research, is consumed more frequently than one might imagine: 86% of respondents eat pizza at least once a week, but consumption doubles in the age group up to 24 years old.

The image of pizza as a very heavy or high-calorie food involves less than 5% of those interviewed: on the contrary, pizza in company seems to be the food Favorite homemade dish among Italians.

In terms of preferences, it is quality that reigns supreme: 76% of respondents prefer top-notch ingredients and almost all consumers admit that they are willing to pay more for a quality pizza prepared with local raw materials.

In particular, the youngest among those interviewed seem to be more attentive to the quality of the dough: 76% prefer Italian ingredients, while 52% declare a preference for ancient grain flours.

Among more mature people, there is a clear propensity for a healthy and easily digestible pizza: 66% of those interviewed prefer long-leaved pizza, which has fewer complex yeasts and sugars.

But which pizzas do Italians prefer? The classic round pizza has no serious rivals, with 76% of preferences. Among the various variations of pizza to plate, the Neapolitan with high edge exceeds 30% of preferences, while the Roman pizza – thin and “scrocchiarella” according to Eataly's definition – 11% of respondents are in favor.

Pizza: Italians' favorite comfort food

It's no surprise to know that Italians' favorite pizza is the classic round pizza to eat together and share with friends: pizza is synonymous with flavor and conviviality.

A second survey by Doxa, “Those who laugh at the table laugh well: foods that make people laugh a lot”, reveals that for 74% of Italians it is precisely a pizza-based dinner that brings joy to the table.

That carbohydrates are one of the best friends of a good mood is certainly not a mystery: however, pizza also stands out above desserts, preferred by only 40% of those interviewed, and street food so popular among younger people.

As creative pizzas, or with unusual toppings, are now welcomed by 45% of those interviewed.
