O preparation It consists of carefully washing the intestines under running water, rubbing with salt to degrease them. Then, drain them and finally roll them in parsley and chive stalks, previously wrapped in a veil of goat fat.
The Sicilian, or Palermitan, delicacy must be slow roasted on the grill and well cooked, or rather, slightly toasted.
Generally, the stiggiola is served with lemon and accompanied by a Sicilian gazzosa or a good glass of red wine.
