The gastronomic tradition of the Lazio region (or Lazio, in Italian), and especially Rome, boasts a wide range of dishes, from carbonara and cacio e pepe, to polpetas and tripe.
The Gambero Rosso Champions of Tradition 2024 Award
"Rome and the city of Lazio” is Gambero Rosso’s 2024 guide, now in its 34th edition. It features the best places to eat not just in the capital, but throughout the Lazio region.
The best restaurants, tractor shops, bakeries, breweries, bistros and grocery stores recommended for everyday shopping were selected.
In addition, there is an indication of the best pickup and delivery services. Special recognition was given to establishments that offer the great classic dishes of the Roman tradition.
This award was called “Champions of Tradition”, or “I Campioni della tradizione”, in Italian.
To award this title, Gambero Rosso experts selected five places that best prepare five dishes considered symbols of this territory. Among them, the first is carbonara, a dish so beloved that there is even a Carbonara day.
According to some transmitted stories, carbonara was born in Monteleone di Spoleto and arrived in Rome with the carbonari of Valnerina. Another dish on the list is the famous cacio e pepe, one of the most famous and appreciated Italian specialties in the world, so much so that it was featured in the New York Times.
The list continues with three other local specialties: Roman tripe, oxtail e dumplings.

In the 2024 guide “Roma e il meglio del Lazio”, the title of Champions of Tradition was awarded to five famous restaurants. They all offer dishes linked to the territory and tradition through a rich and high-quality menu, but they stood out especially for one dish.

The bistro Uproar, close to the Trevi Fountain, for example, is recognized for its excellent carbonara made by historic chef Nabil Hadj Hassen. The menu is not only special for the dishes, but also for the wine list.

A Trattoria Da Cesare, on the other hand, was identified as the best for Roman tripe, a typical dish from the capital.

In the Testaccio neighborhood, the Flavio al Velavevodetto is recognized for its excellent dumplings, and, in season, the artichokes alla Romana.

Also in Testaccio is the Checchino valley 1887, a historic site in the capital famous for its delicious oxtail. The wine cellar is also very beautiful, which was built in one of the natural caves of Monte Testaccio and now houses quality wines.

Finally, the best cacio e pepe, on the list of the best traditional restaurants in Rome, was awarded to Roscioli Salumeria and Vineria, located a few meters from Field of 'Fiori. Roscioli is a place that offers cuisine inspired by Roman tradition and uses excellent quality local ingredients. The cacio e pepe is award-winning here, made with tonnarelli all'uovo, pecorino Romano DOP, cacio di Moliterno, pecorino di Fossa di Sogliano al Rubicone and a triad of peppercorns.
