What is the best pasta, the best pasta in Italy? Altroconsumo, the Italian Consumers Association, carried out an analysis based on 25 samples of penne. The ranking is full of surprises at the top.
Best paste: how the Altroconsumo test works
To prepare the ranking, Altroconsumo subjected the products to several tests.
In the laboratory, parameters such as presence of soft wheat, protein and fiber content e possible traces of impurities.
In the kitchen, both raw appearance as result after cooking were taken into consideration (evaluating aspects such as firmness, adherence and absorption of the sauce).
Altroconsumo also provided some indications for identifying good quality pasta.
A heart, for example, must be intense yellow and, when breaking, the dough should make a dry noise.
Pay attention, then, to the presence of small black dots (impurity index) or white dots (mealy parts of the semolina due to imperfect processing).
Best pasta in Italy: podium and score
In first place in the ranking of the best pasta in Italy prepared by Altroconsumo is Free Earth, a brand that brings together several cooperatives belonging to the Libera association network, with a rating of 79/100.
In second position, with a score of 74/100, is line Balance, from Esselunga.
The masses of Sgambaro, a Venetian company specializing in pasta since the late 1940s, complete the podium, with a score of 72/100.
Of particular interest is the impact on the price: Esselunga pasta, in fact, costs much less than the other two (a half-kg package costs less than 1 euro, while the price of the other two brands is around 1,5 euros).
Best pasta ranking in Italy: the other positions
The mass of Esselunga's Equilibrio line is not the only “own brand” in the ranking Altroconsumo, as reported by 'Corriere della Sera': in fact, the ranking also includes Coop's Viverde (rating 63/100), Carrefour (score 57/100) and Conad (54 / 100).
Among the most famous pasta brands in Italy are pastas voiello (score 69/100), Barilla e De Cecco (score 66/100), La Molisana (65/100) and Towards (64 / 100).
Also in this case, the price differences are notable: they vary between 79 euro cents for Barilla and 1,22 euros for De Cecco, rising to 99 euro cents for pasta from La Molisana.
