Group specializing in food products will offer 20 courses
The Italian multinational MEC3, specialized in food products, will offer around 20 artisanal gelato, confectionery and decoration courses in São Paulo throughout this year.
The classes take place at Casa Optima, a kitchen-school within the company's headquarters in Brazil, in Cotia, and range from preparation techniques to entrepreneurship tips and guidance on setting up shop windows.
“It’s part of my life project not only to promote the gelateria in Brazil, but also to help entrepreneurs. We cannot lose sight of our tradition”, said Italian chef Luca Lenzi.
Author of the book “Gelato Irresistível”, Lenzi is originally from the province of Prato, in Tuscany.
According to Lenzi, for a gelato to be considered Italian, it needs to follow some precepts. “The recipe must be the result of research into the best products available, and the equipment used to make the gelato must all be 'Made in Italy'”, explained the chef.
Another rule is that the gelato must be served with an Italian spatula, and that 60% of the raw material must be imported from Italy.
Furthermore, the real Italian gelateria is obliged to offer traditional flavors such as fior di latte, nocciola and stracciatella.
“We consider gelato to be a food, and our goal is to promote this philosophy in Brazil”, he added, highlighting that, among the market trends for the coming years, are “sugar-free gelatos”.
In addition to the gelateria business, MEC3 is a supplier of ingredients for confectionery and coffee shops. Its flagship product is the “Quella” paste, made with cocoa and hazelnut cream, used by big names in confectionery and gelateria in Brazil.
Recently, the company also acquired Blend Coberturas, expanding its operations in the sector and, in 2020, it will also bring to the market a complete line of original cocoa called CUZCO, from Giuso Spa.
