Italy already celebrates Carnival with various events, parades, processions and costume balls across the country. However, the festivities also attract attention for their gastronomy, mainly for the typical sweets sold in bakeries during the celebrations.
Until the beginning of March, from big cities to small towns, fun is guaranteed for those who hide behind a mask. Furthermore, many people take the opportunity to eat some sweets before fasting during Lent.
Among the main ingredients of typical sweets of Italian carnival, there is boiling oil, a generous pinch of powdered sugar and an intense citrus flavor, which attract the public to the country's confectioneries.
One of the main sweets are fried tagliatelle from the region of Emilia Romagna and Lombardy, in northern Italy. Accompanied by some grated orange zest, the dough is fried, rolled and sprinkled with powdered sugar.

Another popular dish at Carnival is Fried Rice, the rice pudding, very traditional in Lombardy. It is cooked in milk flavored with citrus peels, as well as butter and sugar. After cooking, the rice is mixed with eggs, rum and flour and then fried.

In Sardinia, tourists can enjoy the famous Carnival zeppoli. They are soft donuts, accompanied with grated orange and lemon zest, in addition to being flavored with a typical brandy from the region, fil'e ferru. After frying and sautéing in granulated sugar, they are served very hot.

Still in the south of the country, but in Sicily, the Testi di Tùrcu, typical sweet from Castelbuono, is one of the most famous in the region during the carnival period. It is a spoonful dessert made from thin layers of fried puff pastry, accompanied by cream, lemon, cinnamon and chocolate.

O Florentine schiacciata, in Tuscany, is present in all pastry shops, bakeries and bars Florença at this carnival time. It is a type of soft sweet bread with vanilla and an intense orange flavor, where you can enjoy the peel and juice. The traditional recipe does not include cream, but many reinterpretations of this dessert add the ingredient and even chocolate.

In Veneto, the galani, also known as “crostoli“, are the protagonists of carnival. They are prepared with a dough very similar to pastry. They are fried to make them very crunchy and then topped with sugar. (Ansa Brasil)
