Pomegranate – 1 kg (without peel 690 g)
Pure alcohol 96° – 500 ml
Sugar – 500 g
Water – 800 g
HOW TO PREPARE POMEGRANATE LIQUEUR
To prepare the pomegranate liqueur, start by peeling the pomegranate, being careful to remove the thin white layer that surrounds the grain. Pour the seeds into an airtight container and add the alcohol.
Close the pot and let it macerate in a dark, dry place for 12 days. Shake the bottle every day. After 12 days, strain this mixture through a fine sieve to collect the juice.
Prepare the syrup: pour water into a pan and add sugar. Heat until hot, but without boiling. Just so the sugar dissolves. Let the syrup cool. Once cold, add the alcohol macerated with the pomegranate.
Mix well and pour the pomegranate liqueur into a sanitized bottle. Leave at room temperature for 20 days before serving.
Storage
Pomegranate liqueur can be stored for up to 90 days in the refrigerator or at room temperature, as long as the weather is not hot.
